BLT soup (taken from Reader's Digest Kitchen Secrets)
4 slices bacon
2 medium-sized carrots, peeled and chopped
1 large yellow onion, chopped
1 stalk celery, chopped
1 large clove garlic, minced
1 can (28 ounces) whole tomatoes with their juice
3 cups Browned Beef Stock or canned reduced-sodium beef broth
2 tablespoons chopped fresh basil or 2 teaspoon dried
One 1- by 1/2 inch strip orange zest
1 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon black pepper
4 cups shredded romaine lettuce
With sharp kitchen scissors and with bacon slices stacked, cut bacon crosswise into 1/4-inch stips. In a 4-quart saucepan over moderately high heat, cook bacon until crisp-about 4-5 minutes. Transfer bacon to paper toweling to drain.
Add carrots, onion, celery, and garlic to bacon drippings in pan. Saute over moderate heat until tender-7 to 8 minutes. Stir in tomatoes and their juice, stock, basil, zest, salt, sugar, and pepper. Bring to a boil, reduce heat to moderately low, and simmer, covered, 25 to 30 minutes. Set aside to cool.
Working in batches, puree the mixture in a blender at high speed or in a food processor until smooth-about 1 minute. Return soup to the saucepan and cook over moderate heat until heated through--about 5 minutes.
Stir in shredded lettuce and cook until wilted-about 1 minute more. Ladle soup into bowls and garnish with reserved bacon. Makes 6 servings

This is a super tasty soup, hope you like it!
Quick chunky chickpea soup:makes 8 servings at 2 points each.
1/2 onion chopped
4 carrots chopped
About 4 sprays of olive oil
1-15 Oz can garbanzo beans
1-8 Oz can chopped tomatoes (seasoned with bell pepper, celery and onion)
1 box ( liter) of beef bone broth
1/2 cup raw cashews[i accidentally said 1/4 in video](soaked for 1 hour)
1/4 cup sun dried tomatoes ( soaked for 1 hour)
Spices: 1/2 tsp cumin, 1/4 tsp dried garlic powder, 1/4 tsp oregano, 1/2 teaspoon smoked paprika ( must be smoked for extra flavor) salt and pepper if desired.
4-5 large leaves kale, chopped
1. Sweat onions and carrots in a large saucepan over medium heat with olive oil. Add spices.
Add 1 cup of beef bone broth, let cook a few more minutes. Add garbanzos and tomatoes and heat through. Take 2 cups of the heated mixture and add to the blender with drained cashews and tomatoes. Blend until creamy. Add creamed mixture back into pan with remainder of bone broth. Salt and pepper to taste. Continue to cook until heated through then stir in kale until wilted. Serve and enjoy!
