This is a super tasty soup, hope you like it!
Quick chunky chickpea soup:makes 8 servings at 2 points each.
1/2 onion chopped
4 carrots chopped
About 4 sprays of olive oil
1-15 Oz can garbanzo beans
1-8 Oz can chopped tomatoes (seasoned with bell pepper, celery and onion)
1 box ( liter) of beef bone broth
1/2 cup raw cashews[i accidentally said 1/4 in video](soaked for 1 hour)
1/4 cup sun dried tomatoes ( soaked for 1 hour)
Spices: 1/2 tsp cumin, 1/4 tsp dried garlic powder, 1/4 tsp oregano, 1/2 teaspoon smoked paprika ( must be smoked for extra flavor) salt and pepper if desired.
4-5 large leaves kale, chopped
1. Sweat onions and carrots in a large saucepan over medium heat with olive oil. Add spices.
Add 1 cup of beef bone broth, let cook a few more minutes. Add garbanzos and tomatoes and heat through. Take 2 cups of the heated mixture and add to the blender with drained cashews and tomatoes. Blend until creamy. Add creamed mixture back into pan with remainder of bone broth. Salt and pepper to taste. Continue to cook until heated through then stir in kale until wilted. Serve and enjoy!
